Canning is one of the newer forms of food preservation used today. Before we had the versatility of canning, people largely used drying, smoking, fermenting, and freezing for preserving food. Thankfully, canning is easier, more reliable, and can really stretch your food budget, plus decrease waste. In this primer for the ultimate canning newbie, we will discuss the types of canning, why acid plays an important role in which method chosen, and ways to get started.
This experiment in fermentation was fun. Last night I had hot sauce on my dinner. I kept thinking “Will this make me sick?”. Chicken tractor… I remember the first time I heard that I had visions of chickens on little bitty Kubota Tractors (I like orange tractors) driving all over the farm.

Chicken Garden Soup: Taking Pride in Growing and Cooking Homegrown Food
This post really should come with a few of warnings.
1. I’m not a chef
2. I have no food photography skills
3. I am a man that loves growing food!
Great, we got that out of the way so I can tell you how excited I am about making soup. This soup is special because it was created on a whim when I asked “What’s for dinner?” and got “I don’t know.”
Out of our experience trying to incubate duck eggs comes the story of Lemon Drop the Duck. The incubation story is a bit sad, but Lemon Drop’s story is one full of miracles and joy.
Inside we had the incubator running trying to hatch out twenty-five duck eggs. Six were determined infertile within a few days. This left nineteen to hatch. When we candled the eggs we could see some growth. It was very exciting to see the progress of nineteen little ducklings in the eggs. This is where our excitement ends for this batch of eggs.
